Ingredients

4 sweet potato’s
2 cans black beans
2 Avocados
2 cloves of garlic chopped
2 tsp salt
2 tsp Chili powder
6 Tbsp. of olive oil divided
2 Limes
16 tortillas (Tbsp. olive oil)
Water as needed

Directions

1. Preheat oven 425
2. Peel +cut sweet potato’s (1 inch cubes)
3. Toss w/ olive oil + chili powder
4. Roast on a baking sheet for 30 minutes
5. Tossing one 1/2 way through baking
6. Drain and rinse beans
7. Cook garlic 30 sec to 1 min
8. Add beans + some water to help mash some of the beans
9. Once heated remove from heat and set aside
10. Again add water if needed
11. Toast tortillas – oil both sides of tortilla place directly on the oven rack in 450 oven bake for 15-20 min. until shells are crisp.
12. Assemble- shell-> refried beans >sweet potato -> avocado -> cilantro -> lime
13. Serves 4. I like to serve these tacos with Cilantro Lime Rice.
